#tbt to that time we had to go dairy-free…and that time continues, there are now THREE dairy-free members of our family, so we are getting better at making meals that taste good for everyone! 

IMG_9517This adorable little guy turned one this week, marking just over 6 months of dairy-free living for he and I. It’s been a rough road; there are days when I literally mope around the house longing for butter! But luckily for me (and you), there are some fantastic family friendly dairy-free recipes out there to share.

Vegan Mac & Cheese Ok, move over Annie’s and Kraft, this stuff is way better. You can buy nutritional yeast at the Coop; it looks kind of like fish food and is found in the bulk section. This is also an extremely easy meal to make.

 

IMG_9482Spinach Cake Muffins – you’ve seen these on this blog before, but they’re that good and dairy free. Plus, if you add some of this icing and coconut flakes you get dairy-free birthday cupcakes! update: we’ve also learned that is you need to cut eggs out you can substitute 1tbsp of flax meal mixed with 3tbsp of water for one egg. learn more here.

This Guacamole is loved by all in our house and since learning how to keep it fresh for days, I make it quite often. It’s awesome on top of tacos or fajitas, and replicates the creaminess that cheese or sour cream usually add.

If you’re looking to impress a crowd, or just need a new way to make a chicken dish, try this Chinese Chicken Salad from the Barefoot Contessa. Since this meal is served cold, it’s a good one for doing ahead. The sauce is mild enough for kids too.

  • One of my daughters is gluten and dairy free. A great standby dish for us is a bibimbap type dish with quinoa instead of rice. Here is a good recipe for it (using rice) https://www.blueapron.com/recipes/vegetable-bibimbap.
